Vital Wheat Gluten is made from the protein found in the endosperm of the wheat berry, containing 75% to 80% protein. When combined with water it becomes highly elastic and has a taffy-like texture. A small amount added to yeast bread recipes improves the texture and elasticity of the dough, helps retain the gas and steam from baking, and gives more volume to the baked bread. It can be especially helpful for baking breads made with whole grain flours and coarse cereals. Vital wheat gluten is often used by commercial bakeries to produce light textured breads, and can easily put the home bread baker on a par with the professionals.

It is a starch-hydrolyzing alpha-amylase with high heat and pH stability derived from a selected strain of Bacillus licheniformis. The enzyme is an endo-amylase that randomly hydrolyses alpha-1, 4-glucosidic bonds to reduce the viscosity of gelatinized starch, producing soluble dextrin’s and oligosaccharides.

Operating Conditions:

  • BL Glucanase is used in malt or brewery industry for reduction in viscosity of malt/barley by hydrolysis of Beta Glucan and other NSP to glucose thus it reduces the viscosity and increases the filterability of the wort

Dosage:

  • Dosage recommended is 0.1 -0.2%, however dosage rate needs to be optimized depending on the process equipment used, dry solids concentration, grain quality etc

Advantages: 

  • Reduces the viscosity of the mash by breaking down various NSP's
  • Increases the filtration rate thus reduces lautering time
  • Can achieve clearer wort. Suitable for middle to high temperature process
  • Reduces processing time, Increases the fermentation efficiency

Storage stability and Handling Precautions:

  • Store it in cool and dry place and avoid keeping it in direct sunlight
