Dextranase Enzymes and amylase are used in Sugar processing. Dextranase are used in Cane industry for hydrolysis of Dextrans which pose many fundamental problems in processing of cane and extraction of juice.

In sugar production dextrans are undesirable compounds increasing the viscosity of the flow and reducing industrial recovery, bringing about significant losses. The use of dextranase enzyme is the most efficient method for hydrolyzing the dextrans at sugar mills.
